Ingredients:
3 c. flour (I prefer King Arthur whole wheat)
3 T. baking powder
3 T. sugar (I prefer organic coconut sugar)
1/2 cup
1 cup brown
1 t. vanilla
1/3 - 1/2 c. 100% pure pumpkin puree
3 c. non-dairy milk (I prefer organic unsweetened soy or unsweetened vanilla almond milk)
About 1 T. cinnamon (I prefer a combination of cinnamon and pumpkin pie spice)
Lots of vegan chocolate (I prefer Trader Joe's semi-sweet chips)
Instructions:
Mix all ingredients in a large bowl in the order listed.
You'll notice batter get fluffy because of the baking powder.
Stir in cinnamon and chocolate.
Heat frying pan to medium. My pan comfortably fits 3 pancakes at a time.
Flip after about 4 minutes.
Cook until golden brown.
Note: inside should be cooked. However, if it's still moist, it's ok. You didn't use egg. You're safe π
Options:
You can add hemp hearts, ground chia, or ground flax for additional nutrients.
You can add or swap berries for chocolate.
You can add nuts.
